Momite does it again!

Back in February, I asked my Momite (grandmother) for some good recipes I could try. She is always making delicious and unique dishes and I know I can rely on her to give me some great recipes! For Valentines Day, I made her lasagna, and it was a HUGE hit!

So tonight, I decided to try her Creamed Chicken and Biscuits which she promised was easy and good. Boy, was she right. Matt and I quickly finished the whole dish and commented several times how delicious it was.  At one point, he declared it one of the top 10 best dinners we have ever had. 

So here's what you need:
-1/2 large onion
-4 Cup cooked chicken
-1 can cream of chicken soup
-1/2 Cup chopped pimentos (we decided to omit this since Matt doesn't like pimentos)
-6 canned biscuits
-1 1/2 t. butter (I just eyeballed this as for what I thought would be necessary to saute the onion)
-1 Cup sour cream
-1/2 cup milk
-1 Cup grated cheddar cheese

To make:

Preheat oven to 350. Grease bottom of and 11 x 7 baking dish. (I halved this recipe so mine is in a smaller dish).

Saute chopped onion in butter until tender.

Combine chicken, onion, soup, sour cream, milk, and pimento in a medium bowl; season with salt and pepper.

Spoon into the baking dish and bake for 15 minutes.

Remove from oven. Sprinkle with 3/4 Cup of the cheese. Arrange biscuits on top and sprinkle with remaining cheese.

Bake until biscuits are golden brown and the sauce is bubbling- about 20 minutes.

Serve immediately.

See?! Easy peasy and seriously fantastic. I don't think I can come up with more adjectives but take my word and try this. It is gooood.

Flo-Rida, the state not the rapper.

As previously mentioned, we went to the Destin, Florida this weekend with Matt's family (well some of them).  We had such a great time and the weather was beautiful.  Perfect way to say goodbye to the summer.

 We stayed at the Silver Shells Resort and Spa, and it was super nice. I'm surprised they even let me in.

We came down on Friday and left on Monday.  Matt's family had to leave on Sunday so Matt and I got a little alone time. Which means that we went and killed it at putt-putt and at the arcade.  Get your minds out of the gutter people!

It was a great trip, now I just need someone to buy me a beach house and I can make this happen more often.  Any takers?

While the boys are away....

Our life has been pretty boring lately, hence why I haven't had a lot of recent posts. I didn't think you would like to hear about me sitting on the sofa watching Jersey Shore and Big Brother. Don't be jealous.

This weekend, Matt went away to do this.

 This is an annual trip he, his brothers, father, and some other family members take to get away and do what they never always do, play golf.  Seriously, Matt plays so much you'd think he'd be good by now. I kid, I kid. He is good. I think I should start pushing him to get good enough for the PGA tour. I could see myself as a PGA wife....

So while he was gone, my mom came to visit me!

It was a great weekend with mom. We went to dinner Friday night, went shopping Sat, watched movies and ate pizza Saturday night. And as quickly as she came, this morning she left.  It was a lot of fun seeing her and spending time together, just us girls! Love you mom!

This weekend we will make attempt #2 for the beach with Matt's family.  We were supposed to go on Labor Day Weekend but a tropical storm Lee decided to come and cramp our style. Pray for good weather!

*On another note, I can not believe it has been 10 years today that our country was attacked by terrorists. I was sitting eating breakfast at McDonald's my first year at Auburn University when my brother called to tell me a plane had hit the World Trade Center. I had no idea how significant that event and the others which would happen that day would be to our country. The victims and families are still on my mind and in my prayers today. I am also so thankful for all the heroes who stand up and fight for our freedom every single day. God Bless America!

Weekend/Birthday Re-cap

We have had a great weekend so far.

Originally we were supposed to go to Destin with Matt's family for the long weekend. But as we got closer to the trip the weather appeared to look worse and worse (hello Tropical Storm Lee) and we decided last minute to re-schedule the trip for a few weekends out in hopes to avoid going to the beach in bad weather. Nothing is worse than getting to the beach and it raining the whole trip. Yuck.

So instead, Friday night we went to eat at Mugshots in Vestavia with Matt's family to celebrate he and his brother Nick's birthday. I had never been there but had heard great things, and was not disappointed. It was fantastic and I definitely recommend going there if you like burgers and live in Birmingham.

Matt's birthday was a success, and Auburn pulled out a very late (and scary) win.  We had several friends over to our house Saturday to watch football and celebrate Matt's birthday and had a great time.  In between games, we sat outside and watched the boys play Bocce Ball enjoying the nice, cooler weather. I love when the weather turns a little more cool, and we are starting to experience that some now. I didn't take many pictures Saturday, but here are a few that I did.

Sunday and Monday (today) have been pretty wild. Daily activities have included watching television, wearing pajamas all day, reading at times, and napping at others. Pretty nice I must admit.

Tomorrow is back to reality, but for today, I'll enjoy my time off! Happy Labor Day!

Best Day Ever


Today is going to be an awesome day! First of all, it is my husband's birthday! He is finally 27, which makes it sound much better then when I say I am 28 married to a very young looking 26 year old. So I am grateful for that, but really I am most grateful for him. Matt is such a wonderful man. He is kind, considerate, funny, intelligent, and not to mention very handsome! I thank God for him each day and feel so blessed that he picked me. Happy birthday Matt!

It is not only his birthday, but the first day of Auburn Football! I have been longing for Saturdays of wearing my orange and blue, eating too much tailgate food, and cheering for my Tigers.  Football season is one of my favorite times of the year. There is nothing like being at Auburn tailgating with thousands of other Auburn fans and going to the game, shaker in hand, yelling your heart out for your team. Since we aren't able to go to all the games this year, we will most likely be hosting or going to football parties at friends houses most Saturdays. It s so much fun to catch up with friends while watching football at the same time. I love it!
